I like Paladin Cecil...he's got the knight in shinning armor any time of course Edward has the sensitive musical side to him too...of course my favorite will always be Locke...they're the ones that came before angst ridden teenagers.
Out of the angsters I like Vincent (as long as he keeps his mouth shut), Cloud (again stays quiet), and Irvine (pretty much any of the games after VII the hot guys have to keep their mouths shut to stay hot.
