FFVII on the PS3 has been teased about time and time again by SE. As the life of the PS3 starts floating towards its end within the next year or two, it is looking less and less likely that they will bother to do this project on the PS3. The only reason it may come out on a console this gen is if Sony is aiming for one last sales boost before they abandon their PS3.
Even then, it isn't like you would see the game for another year and a half or so. Where we may see an FFVII reboot is somewhere people may not expect, and that is the Playstation Vita. Sony struggled in the handheld market this generation against Nintendo in western countries. Piracy grew rampant early, and the PSP suffered a slow, third party abandoned death that dropped sales drastically. If they include an FFVII remake on the Vita at any point, sales on the Vita will soar. The Vita is still a few months off though with few announcements past what we may see at launch and within the next couple of months after.
tl;dr - We're unlikely to see FFVII redone for the PS3, though we may see it on the likes of the Vita, or even as late as the PS4.

That FF7 tech demo is still dead sexy.
And the PS3 has about at least 2 years left on it before they develop something new. (Unless some sort of technological breakthrough happens, the PS3 is the highest powered system and really can not upgrade enough to consider a whole new system.)
But, seeing the Vita port an FF7 would be most disappointing. They always do things like this..I read an awesome game coming out, and am most disappointed when I see "For Nintendo 3Ds"
But, They may not release a remake of 7, maybe an alt story, like they did with Crisis Core.

They weren't. When they released FF1, they pretty much thought they were screwed.
For those who do not know, they named Final Fantasy because it was supposed to be there final game they made, if it did not do well they would be not in business today. It's quite ironic.
