In my opinion, Square made the final bosses easy so people who arent hardcore RPG players can finish the game and enjoy it. Why do you think they added the Monster Arena in FFX and the Via Infinito in FFX-2 as well as dozens of other sidebosses in the previous games, so all the stat maxers would have a challenge at the end.

There are ways to beat these games w/ challenges, even for hard-core gamers.... such as... no limit-breaks/overdrives/whatever, only certain ppl unless necessary for the story, .. put stipulations on it... play it with one person dead all the time ... or some other restriction... no accessories.... whatever floats your boat... I know of ppl who play FFX with only Lulu... *shrugs* or Tidus... it's a biotch... but it's doable... if you have the constitution for it... you can make anything a challenge.... if you want to....

How much HP etc did you guys have when you beat Yu Yevon in FFX?
My highest character was Tidus on 9999, then Auron on 9000 something, the rest were all below 5000HP.
