well if you told someone the joke in person the word pear and pair could be used with the other not knowing but since you are writing it than you have to put pears.
so i am guessing that there are 3 "pairs" (meaning 2 pears each) in the pear tree, each takes one "pear", but that would only mean that there are still 3 pears left...so yeah maybe i am close and others could get the riddle
or
my other thought was that each of the men could "grab" a pear, but 2 of the do not "take" a pear for themselves, thus leaving 2 pears in the tree
