i expexted sephiroth to be a total badass at the end..but he was definitely too easy. was a little dissapointed, given how much of a whoopin he should be able to dish out.

Ruby WILL NOT appear before disc 3 but emerald is permenently swimming around underwater...
Emerald, when you defeat her drops a certain item that you swap with the guy in the town next to midgar... He then gives you some really really good accessory item, forget what it is but it is good. Ruby on the other hand, when you swap the item gives you a friggin gold chocobo... but you need a gold chocobo before you even fight the thing (to collect KotRT)
Yeah you can fight 2 weapons in disc 2, but not worth it until disc three and you are say lvl 80 + with phoenix, final attack and KotRT all mastered several times... should take the time to get cloud to lvl 99

I think the things you get from the Kalm Traveller are:
Underwater Materia - from the guidebook
Master Magic/Command/Summon - from either the desert rose or the... earthharp?
Gold Chocobo from ^ see above.
