For Ruby use Cait Sith´s Slots ^^ (even if you use this you still need to have 2 dead chars), it worked for me... Anyway, that´s if you just want to kill him, there are more challenging ways, try developing strategies.
I think that Cloud´s limit learning (for lv2 and lv3 first limits, Blade Beam and Meteorain) depend on the no. of enemies you killed, so when you get the second lv1 limit, go to a place like Yuffie´s forest and kill  ... That way I got Finishing Touch not that late in the game (near the beginning of disc 2; anyway, I still had to wait for Omnislash  )

I've beaten all weapons I think...1st at Midgar,then the flying weapon,the desert weapon and underwater weapon. Don't really care abt their names cuz all that matters is killing them!

Well... Both of Ultima Weapons (FF7 &  are rather easy, and in FF8 may hit a lot, but just one or two limits and won battle.
Emerald Weapon is a long fight (unlss you use slots) and his Aire Tan Storm is deadly...
Ruby Weapon, don´t want to talk about it, just use slots ><
Omega Weapon, it´s another long fight, but this one can be easy, but only if you use Holy Wars, without that items, I think it´s just impossible :S
Still... The hardest is Ruby.
