If wanna defeat ultima simply keep ur character's lvl pretty low (below lvl 15 will do),junction some strong magics onto ur character's stats (Triple>>Draw from Odin,Meltdown>>Gayla cards,etc),den try using Squall's limit Renzokuken once/twice will kill em'>>u dun hav to get LionHeart to defeat it. Since it's very at low level,why dun u try drawing Ultima into ur characters 300 ultima. But. . . mayb dat method wud b boring either.
But I enjoy FF8 alot,da storyline has alot to do wif my life,I understand da character's standing,and Rinoa is hot.

I beat ultimercia without Squall.Little bit tough but fun.Oh yeah,one try only.Make all of your character invisible.That should be easy.

Is it ultima wepon or ultimecia in da 1st place? Quisty? Nvm,if its Ultimecia then there're shudn't b a prob for u i guess. It's omega weapon u shud pay more attention. Irvine u meant invincible or invisible? Is it da Hero item?
