Yunalesca. Fighting her in my No Sphere Grid+Rikku Only+No Overdives file was possibly the most fun I've had with a normal storyline boss.
Penance was a good boss (sobeit optional) too.

Yunalesca was also fun in OSGNSNCNONIIENSCNENNENBBRSO (cant be bothered to write it out in full, if you really care, look up gamefaqs). A lot harder than it looks (even when every character has their sphere grid filled out minus areas blocked by locks)

I think that evare and yunalesca was were good bosses yunalecsca, is very beutiful in my opionion, also i like the "challage" theme music my favorite boss theme music in the game.
