Well... Seriously the easiest out of them all Would have to be Yu Yevon, with every other boss it is possible to lose against... This dude, it isn't... Seriously, it ruined the last part of the game!

I know a boss easier than any boss in any game in the entire world. A boss so easy, it will make all of the other bosses you think are easy look like final bosses.

GOGO, from FF5.
Gogo is a mimic whose sole purpose in existence is to copy everything you do. So what do you do? NOTHING. You put the controller down and pop open a cold one. Eventually, he'll praise himself for successfully mimicking you doing NOTHING, and then the battle ends. Reward is the Mime ability.
(Most people don't know this, and usually end up trying to beat the crap out of him, which is futile because he's immortal. By attacking him, he attacks back, thus spelling out your imminent demise)

But that also means you have to WASTE one of your precious X-Potions early in the game.
FF5's Gogo is still easier, as explained above.

Skeleton Tyrannosaurus Rex (FFV): One Pheonix Down, dead. About 15 seconds, since it takes time to use the item.
Final Boss of FFTA2 (Neukhia?): Very little HP, flimsy attacks. 100 damage is nothing with a Regenga privilege, and the core itself has only 1200 HP.
Gogo (FFV) and Dark Cecil (FFIV): Sit there and do nothing.
Abductor (FFV): 1500 HP? Come on. I can kill it in one hit.
There's my set.

When you fight Sephiroth for the last time...I mean you can do omnislash or just wait for a few seconds...either way you win...kinda sucked
