no. It's supposed to be a challenge when you fight, not just a one way ticket to absolute power. If they didn't attack first, you would almost never lose. It would get boring.

no not really...it's not like it makes the battles impossible to win...plus you have the defend option so you dont always suffer the whole damage from the first attack

It is. I think the brumos attacking first is fair, since after that we technically get to dictate the terms of the battle.

I agree, if you get first hit and they miss one of their attacks they'd only hit you once or twice in the fight. Usually only taking like 30% of your health and people would be battling 3 or more times without healing (commonly, I understand this can happen on occasion as the system is now)

I just find it annoying when the monsters that I sometimes fight are stronger than me in terms of defense so they damage me more and me damage them less.

You chose quite a hard class though, so it´s probably that. In most classes, enemies take you down after 4-5 hits, but in some hard classes (like Monk or ProRobo) you´re out most of the time after 3 hits.
Good luck with it, if you think it´s too hard just switch to a spell-using class like Wizard, which is much easier XD
