The hardest part for me was in disk 3 because the story started getting really cool so I stopped leveling up which of course made it harder lol

Yeah, I agree with that. The only place I leveled up on disc 3 was Oeilvert, and only because I got stuck... I really enjoyed the story there, especially at the end of disc 3.
here . Also look at Shandy's Chocobo FAQ if youīre planning on raising Chocobos ^^

I have to say I was pretty damn lucky when fighting the last boss, but yes, I beat it with level 48.

Well, if you have every party member with level 48 it should be enough... My level was quite unbalanced since Oeilvert, because Zidane and Steiner were way higher than Vivi and Eiko, added to that, Eiko got kidnapped ><
