Bosses (hidden in some places)
I know of Invincible, Gogo, Shinryu, Omega, Ramuh, Shiva, Ifrit, Carbuncle & Bahamut. Are there any more?

Yes there are that many though Ramuh, Shiva, Ifrit, Carbuncle & Bahamut are actually summons that your expected to fight... And no I believe thats all the bosses unless you include the bosses in the optional ruins that you go to, to unlock the 12 ultimate weapons

no... none of them are... tho i believe there is a pseudo sub-boss in the sand temple... that is... if your speaking of the sand temple that u clear to unlock more of the ultimate weapons

I can't get into the sand temple though. I don't have the key or wharever it is you need to get into it. The door says it's locked from the inside anyway.

hmm... if we're thinking of the same place (the sand temple in world three)... after the second black hole thingie opens up where the library usually is you go talk to these dude and then you can go back and fight these two gargoyle things to get in... i think its optional... but getting the three new ultimate weapons is worth it

No, you most defeat the summons in battle before you can use them.
Some of them are optional and some are not.

Also, you can find Odin and Leviathan...
And you can find (only in the second world) Catoblepas, or Shoat, donīt remember itīs name, itīs the same monster, also, in the second world thereīs a tortoise called Gilgame, if anyone can beat it, post what you get hehe...

The Invincible? Which one was that? Donīt remember 
There arenīt many secret monsters apart of them, I guess... Maybe the Golem summon counts?
The only summons you can buy are Chocobo, Sylph and Remora; all others must be defeated or found.
