MK = Mortal Kombat aka the first game to have made people scream "violent" even though it wasn't.
You could say it is the GTA of fighting games in the early arcade days following SF2 as the second best fighter at the time. (In terms of popularity, FF and AoF were still having sex to get KOF out)

MK2 wasn't censored that is what made it so great, the first MK was censored but since the Sega version wasn't and sold so many copies Nintendo (wow come to think of it, that was the first time Nintendo actually gave gamers want they wanted and made money at the same time!) decided to allow blood.

I don't like fighting games, they're probably my most disliked genre. It's all button mashing, yeah even when you perform a combo you need to press the button incredibly fast. The graphics in some of those games are awesome though, I remember getting Bloody Roar on Gamecube (what was I thinking?) but the visuals were stunning.
But for some reason I love fighting movies, lol. even the Mortal Kombat movie I loved
Also getting back on topic lol, I can wait to play Burnout Revenge which I think is released here tomorrow, Burnout 3 is keeping me very happy for the time being.

Yep I can't get into button mashers either. Stapey, you might want to try Destrega, Evil Zone, Bushido Blade (all ps1 games) or Kengo 1,2,3 for the ps2
They're more PVP type fighters than button mashing or "timing" fighters where it's basic everything but it's all about timing your strikes.

The only fighting games I like are wresting games. Especially the ones on N64 they were fun. I still play WWE Day of Reckoning a bit too.

I've heard lots of good reviews about DoR2.
Try those games I've suggested though. They feel like wrestling games you've mentioned control wise.

Try Kengo 2:SotS and Kengo 3 if possible.
It doesn't matter if you haven't played Kengo 1. They're improvements over the first series.
